Kim Shand’s Cauliflower Rice

This weekend, catch Kim Shand’s 4-part series called The Power of Practice at PFY Wayne. On Sundays from 1:30 to 3 pm, she’ll help you make a 30-day commitment to reboot your thought patterns and experience more success. She’ll talk about eating habits and building strength. Kim will also go over the yogic ways to be your best self and achieve your goals. “It’s about being successful at being happy,” she explains.

Here is one of her favorite foods that she loves to eat often:

Cauliflower Rice

Ingredients:
2 garlic cloves, minced
half of an onion, chopped
a few teaspoons of coconut oil
1 head of cauliflower
1 cup vegetable broth
salsa to taste

Directions:
Sautee minced garlic cloves and chopped onion in coconut oil. Add 1 head of cauliflower that has been grated into tiny pieces with a cheese grater or food processor. Once the cauliflower is warm, add salsa to taste and 1 cup of vegetable broth. Cook until soft.
